WHAT ARE MICROGREENS?
Microgreens are baby vegetables, greens, and herbs. Microgreens are nutrient dense, meaning they are generally far more nutritious than their full-grown counterparts. Research has shown that microgreens have 4- 40 times more nutrients than their adult versions! They are packed with vitamins, minerals, and phytochemicals, so they are much more than a fancy garnish- they are an amazing superfood that will enhance any meal.
Microgreens are sometimes confused with sprouts, but they are not the same. Microgreens are grown in soil or other medium and sprouts are grown only in water. Microgreens are grown slightly longer, to a later life cycle, and are usually harvested 10-14 days after germination. They are cut off just above soil level so that generally the seeds are not eaten as they are with sprouts.
